What are the heart pieces for in the Zelda series?

Heart Pieces do not symbolize a direct thing in most of the series; however, in Twilight Princess, Heart Pieces symbolize love. This is shown when Link catches a Heart Piece in the Fishing Hole with Hena beside him. She comments about whose heart he had caught. Also, in Castle Town, the fortune-telling place allows you to choose the path of "love," where Madam Fanadi will show you an image of where a Heart Piece is hidden.

In most Zelda titles, Heart Pieces serve as a collectible to increase your health. When you start the game, Link has three hearts. Heart Containers (different than Heart Pieces) will instantly increase his hearts by one; these containers are awarded after defeating a boss. There are a few exceptions -- in Phantom Hourglass and Spirit Tracks, there are no Heart Pieces; there are only Heart Containers since there is not enough room in the overworld to place them. Heart Pieces are fragments of a Heart Container. Usually, four Heart Pieces make one Heart Container, which will then increase Link's health by another heart. (In Twilight Princess, you needed 5 Heart Pieces to make a Heart Container because of the size of the overworld). Link can have 20 hearts in total.

Heart Pieces are usually hidden in the overworld, in dungeons, and in secret caves you can find throughout the game. A Heart Piece is also a common prize for playing a minigame, along with Rupees and equipment upgrades. They are also a reward given to you after you complete certain side quests. Heart Pieces are usually found in chests.
