An introduction to commercial signs
The use of commercial signs around the globe identifies a business, shop, restaurant, food outlet or service provider located in a particular premises. Such signs offer use a combination of words and imagery to let people know who they are. For example McDonalds has a very familiar use of M lettering which is now well know to most people worldwide.
The variations of designs of signs varies dependant on the level of literacy, for example in some countries it will also be important to use imagery to tell people what sign conveys, arguably even for those who are literate use of good imagery portraying what the business, etc is about is still a good way to design new signs.

Commercial signs are designed with the aim of attracting and identifying businesses and their products to potential customers, for example; signs are placed prominently on retail outlets so people can see the shop from a variety of angles and from a distance. Billboards are rented by large corporations to advertise their products and companies such as drink manufacturers develop small signs to be placed in pubs, bars and clubs to advertise their drinks.

is a signed paper of agreement legal if it is NOT notarized?
I quit my job today. I have borrowed money from my boss in the past. When i went to pick my last check up he held the check until I signed a paper saying I would pay the money back. Is this paper legal to stand up in court if it is not notarized?

Notarization has nothing to do with it. Notarization just provides evidence that the signature is yours. Unless you wish to perjure yourself by denying your signature, notarization is meaningless.
But your boss overreached when he conditioned paying you upon your signing a paper. There is a colorable legal argument that what he did constitutes duress, and voids the writing. Duress occurs when you are required to do something under the threat of an illegal act. Withholding your paycheck was an illegal act.
Even if there was duress, though, it does not void the underlying debt or your obligation to repay it. If you borrowed money, you have to pay it back, whether or not there is a "paper." Do you really think you can borrow money and not pay it back? What are you thinking?
RESPONSE TO ADDITIONAL DETAILS: You and your "boss" are both completely clueless. A notary confirms that she has witnessed a signature. The notary can't notarize later.
I think you should forget this whole thing. Neither one of you is ever going to collect a dime from the other.
